Wild edible plants

Tøndermarsken is home to a wealth of wild, edible plants. The salty winds, tides, nutrient-rich marshland and the Wadden Sea create a natural breeding ground for a wide range of distinctive plants. On this tour, you'll have the unique experience of foraging and tasting seasonal herbs on the salt meadow surrounded by rich birdlife, horizon and the sky. Our experienced nature guides will introduce you to the plants and tell you the story of how the herbs have for generations given flavor and nourishment to the region's meals and, not least, herb schnapps. When we harvest wild plants, we respect nature and harvest sustainably. That's why we never take more home from the beach meadow than we can fit in our hat or a small cloth bag.

From the meadow, we return to Højergård, where a dedicated food guide will help you prepare and eat a small, tasty dish using some of the herbs you have gathered. The rest you can take home and try in your own kitchen.

PROGRAM

  • Approx. 5 hours:
  • 11:00 Bus departure from Marsk Camp to beach meadow with guide - introduction to Tøndermarsken and the Wadden Sea
  • Foraging herbs on the wadi - Storytelling and Introduction with herb guide
  • Bus to Marskgården Højergård
  • With an experienced food guide, prepare and eat a simple dish with herbs in the kitchen at Højergård
  • Return to Marsh Camp by bus. Thanks for this time - see you soon

DRESS: Warm, practical clothing and rubber boots.

BRING: Hat or small cloth bag to collect herbs. Possibly scissors or a small knife.
